Double Tomato Tart

Double Tomato Tart
A savory tart filled with cherry tomatoes and a ricotta – sun-dried tomato pesto, finished with fresh basil and balsamic syrup.

This tart makes my heart sing! Seriously, it’s so simple, easy and delicious. And when you use a rectangular tart pan, it somehow seems a bit more fancy!

Start to finish this appetizer, or light dinner, say with a crisp salad, takes only about 45 minutes.

So what do you need to make this tart?

  • Store bought rolled pastry dough
  • Fresh cherry tomatoes
  • Ricotta cheese
  • Sun-dried tomato pesto
  • Fresh Basil
  • Balsamic syrup

Depending on the size of your tart pan, you may need two rolled pastry dough sheets. I used one and a half to fit in this rectangular pan.
